Homemade almond milk



Two things I refuse to buy for Pesach this year:

  1. That chemical-laden,awful-tasting pareve coffee creamer that is kosher for Passover.
  2. The one brand of kosher for Passover almond milk that is available for a ridiculously high price.

Nope.  Not gonna do it.

And yet, I would still like to offer my guests coffee after the meals.  And most of my guests take some kind of whitener in their coffee.

This year, I'm making my own almond milk.  

Here's the recipe from KosherEye.  I do not own a Vitamix, so I'm sure I will have to do some straining of the milk after I process the almonds, but that's fine; it's a one time thing and considering how easy and cheap it seems to be, I'm up for a little patchka-ing.

    i'm making my own mayo. two yolks and a cup of oil. a little salt and presto. you gotta whip the yolks up till they are pale and thick, then slowly drizzle the oil in. add salt to taste. simple. it doesnt have preservatives so you may have to make 2-3 batches to last the week.

    i'm on a diet for crohn's disease, and cannot eat anything i dont make myself (no starch/sugar, no processed foods). the people who advocate this diet & its recipes recommend using organic eggs for the mayonnaise. scientifically speaking, i dont see how that makes a difference, but i sorta remember from my nutrition days that the worry of salmonella comes from the cavity of the hen where the eggs are laid. therefore, the concern is that when you crack the eggs, salmonella may get transferred from the shell on in. just wash the shell with soapy water if that's the case...i'm not a doctor or anything, but i've never gotten ill from an egg, thank god!

    OK. i just made a pitcher of this almond milk. 7th heaven, baby, 7th heaven! i even left out the honey/dates and vanilla because i felt it tasted so clean and amazing by itself.

    ps-i used a cheapo blender,and after i strained out the blenderized almonds, the grounds look just like the almond flour i use to make my dietetic nut muffins, only a bit moister. i put 'em in a ziploc bag in the fridge for baking tomorrow:) 2-for-1! thanks for posting the recipe!

  6. Very cool DK. I'm looking forward to trying it for Pesach. I think the Kosher Eye was trying to sell Vitamixes, but I don't have an extra $500 to spend on a blender these days. Glad to hear it worked with a normal blender, because that's what I have for Pesach. Can you share the nut muffin recipe? Pesach friendly?
