I learned value of vacuum-packing this summer, when Joshua and I vacationed in Alaska for three weeks.  Whatever food we brought with us that was vacuum-packed stayed good for about 10 days longer than the stuff that wasn't vacuum-packed.  Seriously. I ended up throwing out a bunch of food that I had just put in ziplocs, hoping that refrigeration would be enough to keep it good, but it spoiled on me, and I hate wasting food and money like that.
