I use Near East mixes as bases in many of my side dish recipes. They are very easy to make, as kosher (most are OU certified) and are basically idiot-proof. Hindy's Amazing Rice Salad
Combine:
- 1 pkg. Near East Rice Pilaf, cooked
- 1/2 c. chopped black olives
- 1/4 c. chopped red onion
- 2 chopped scallions
- 1 medium chopped green pepper
- 1 medium chopped tomato
- 1/2 c. raisins and/or 1/2 cup dried cranberries
- 1/2 c. peanuts or pine nuts
Right before serving, toss with 1 t. mustard, 1 T. lemon juice, and 1/4 c. oil.
